Stuffed Squash

      Utensils: Saladmaster machine; 3-quart saucepan and cover; mister inset
      Yield: 4 servings

        1 ounce fresh Parmesan cheese
        1/2 small onion
        1/2 small zucchini
        1/2 small carrot
        1 small apple, cored
        1/2 teaspoon dried tarragon
        1/8 teaspoon freshly ground black pepper
        1 acorn or butternut squash, halved and seeded
        4 cups water

      Process cheese using No. 1 cone; onion using No. 2 cone; zucchini, carrot and apple using No. 3 cone.

      In medium bowl, mix cheese, onion, zucchini, carrot, apple, tarragon and pepper. Stuff squash halves with vegetable mixture; place in steamer inset.

      Pour water into saucepan; place mister inset over water. Cover; cook over medium heat until Vapo-Valve clicks, reduce heat to low and cook for 20 minutes.
